This is the unit I plan to test fyi:
Tripp Lite 2 Port DisplayPort USB KVM Switch, Dual Port DP USB KVM Switch, 4K 60 Hz, HDR, HDCP 2.2, DP 1.4, USB 3.0 Cables, Black (B005-DPUA2-K) https://www.amazon.com/dp/B08NFGFZJD/
I agree with your last point. That is a common problem with KVMs.

To expand, as I realized I was a little terse.
Get a KVM switch. Plug your monitor, keyboard, mouse, speakers, headset etc in to the KVM
Get a USB-C dock
Plug your desktop into the KVM
Plug the USB-C dock into the KVM.
Now you can dock you laptop and switch back and forth

I’ve been fighting this recently and I’m going to revert back to having both systems connected to both monitors and a USB switcher as /u/Next_Entertainer_404 suggests.
I couldn’t even find a dual monitor KVM that supported 1.4 resolutions/rates that was available. Even then they were priced at $500+. So I thought use a single display KVM and then a separate simple DP switcher for the 2nd monitor but that has been a bust. I cannot drive my CRG9 (5120:1440) through the KVM without crazy artifacts and blackouts. The simple switch works as advertised but can only switch with the button and no EDID so its not a great solution for me. I am pushing it with 2m cable from monitors to KVM then 1m from KVM to system. But that distance works fine with 5120:1440 @ 120Hz with the simple switcher, just not the KVM.
Having both monitors hooked up isn’t really a big deal for me, just wish I could change the inputs. The CRG9 doesn’t support the DDC or whatever to send control signals.

I landed on getting this KVM. Works well for the G9, get no problems with G-sync, HDR, or 240hz. Added a USB 3.0 to DVI adapter via the usb port on the KVM and can switch back and forth between my laptop and gaming rig for both displays.
