Technivorm CupOne
It’s a single cup brewer with the same build as its bigger full pot version. Super simple to use and clean. I highly recommend getting a grinder and freshly grinding beans but you’d need to stretch your budget a bit more. This brews in 4-5 minutes from pressing the button and takes less than a minute to load. Makes a great cup of coffee close enough to a pour over with minimal effort.
It does come at a hefty cost of $215 (sometimes on sale for $180ish) but that’s like a couple times a year. I think it’s worth it for a single person household or a single cup at a time drink.
Edit: although it is a bit forgiving on dosing with coffee scoops, as others have mentioned, cheap scale would be nice but more effort. However, you can use any beans with this machine so should be cheaper than pod machines in the long run. The machine also has 5 year warranty and should be built to outlast that.

the thing is, if you’re grinding fresh to put in one of the reusable mesh k-cups, you might as well get a drip machine that doesn’t use k-cups. I bought a Moccamaster Cup-One but if you have a library card, you can check out consumer’s reports for free using the library’s website and look at their top picks. They do test for water temperature (which is the biggest problem with most machines).

If you want to continue with single cup, Technivorm has the Cup One. You’ll need a grinder though but should leave room in the budget for a decent grinder. This is a great single cup machine.
