Many of my students are not interested in lifting competitively, so I focus on squats, deadlifts, bench presses and rows from the Olympic lifts. But since the focus is on long-term goals, I also add in lunges, lat pulls, variations on Olympic lifts and unilateral lifts (one leg at a time instead of both). The books I teach from are The Strength Training Bible for Men and The Strength Training Bible for Women.

In terms of how heavy, that is individualized. I do a check at first to see how much they can lift, and we go from there for both endurance and strength.
