You’re probably looking for a SSD in some kind of rugged case since SSD’s don’t have moving platters and other parts like HDD’s do.

As for what specific one idk but good luck in your search. Luckily SSD prices have been dropping over the years – you can get a 1TB for $80 last checked, about double what a hard drive costs.

EDIT: Maybe something like this’ll do?

Thunderbolt is a direct PCIe connection. Equivalent to having the drive internal in an NMVE m.2 slot.

So it will do great.

It is unlikely that you would notice any speed difference between a good 10gb USBc drive and this 40gb Thunderbolt drive. The rest of the Mac Mini is going to bottleneck you.

I personally would buy a bigger, slower drive with my money, as it will work just as well.

Do note. Reads from SMR should not be appreciably different than PMR.

Writes to SMR can be glacial if the disk is very full or you make large writes that overfill the disks PMR buffer

Of course the biggest problem with SMR is their lack of support in many NAS and ZFS.

But your use case, PMR and SMR sound equally bad.

2tb at $200 SanDisk SSD will do 10gb, twice the speed of a SATA SSD

Past 2tb prices get stupid and HDD are the only option. 8tb for $200. But expect this to give you 1\10th the performance of the above SSD

+1 on SanDisk 2TB Extreme Portable SSD there is an other version which is slower but still great (and $70 cheaper)
