I use the OXO pour over. Super simple to use, has measurements on the water reservoir. I had to bring my RV one inside so I could make them at home too. I need to get another one.

Hey, check out the OXO pourover as well. It’s amazing and nearly impossible to mess up. I got one after I cracked my Clever and haven’t looked back.

I don’t think enough people give Keurig the credit for how convenient it is: one or two actions gets you a hot cup of joe, with little to no cleanup. As low-tech as pour over is, there’s still lots of unknowns and a lack of convenience. I have searched for the most convenient coffee brewing solution that doesn’t generate the waste that a K-cup habit will (coffee is still an incredibly wasteful habit); and the solution I’ve found is this OXO pour over maker with a water tank. It still requires a few more actions than a keurig, but it eliminates one of the most inconvenient parts of the pour over coffee routine for me which is the pouring. I prefer to be able to just boil a lot of water, fill up the drip tray to whichever level I want, and then go do something else while gravity dispenses the water at an optimum rate. Cleaning is also a breeze, which is a huge mark against French press (I’ve been in plenty of places where I didn’t have access to running water, and it’s a pain trying to clean a French press without it, and a French press is enough of a pain to clean even with running water).
The downside for OP though is the OXO pour over only holds up to 12oz, although more can always be added (so OP would fill up to 12oz, let it empty, then pour however much extra they would like).

OXO makes a V60 pour over coffee maker with a water tank/dropper. It really simplifies the process and all you gotta do is dump out the filter when you’re done (compostable filters, of course). I haven’t tried aero press yet, but if it’s remotely like French press (especially when it comes to cleaning), I’m not sure this OXO can be beaten as far as convenience goes. It’s the closest I’ll get to a Keurig without the wastefulness of K cups.

This OXO pour over has a “drip tray” that you fill with hot water and it drips out the water over the grounds. My hesitation with pour over is the time it takes to properly pour out the water, and reusable filters are almost always a pain to clean. With the OXO setup, I use compostable filters, dump in the proper amount of grounds, and pour in as much hot water as I want. A couple minutes later and my coffee is ready to go.

At the risk of sounding like a shill, I’m going to recommend the Oxo On single server pour over (Amazon link). My wife loves it because it’s as close to “set it and forget it” as we can get.
Boil water, rinse the filter, put your ground coffee in, put the tank on top, fill with water. That’s it. Wait about 3-4 minutes and you’ve got good coffee that you don’t have to watch over.
I like the Clever that /u/bbobeckyj suggested as well, but the Oxo has the additional benefit that, if you forget about it and leave it a few extra minutes while chasing a kid around, you don’t have over-extracted coffee.
Bonus, too, that it’s only ~$20, so you save a few bones for if she also wants to get a grinder.

Look at the OXO Good Grips Single Serve Pour Over Coffee Dripper with Auto-Drip Water Tank. (!) It’s a pour over cone with a water reservoir/dripper that makes it almost push-button simple. I’ve made some fine cups with mine, and while it never quite hits the heights of a Chemex or V60, it still makes it into my rotation, and it’s possibly the only pour over device that does not call out for a gooseneck kettle.
And if you haven’t looked into a French press, you really ought to, it also seems like a good fit for your situation.

Take what I am about to say with a grain of salt. It’s just my opinion and I’m sure someone else will comment saying something different. With Chemex you are paying for the brand name and the cool wooden collars. The Bodum is hand blown borosilicate and comes with a reusable mesh filter whereas the Chemex uses a proprietary paper filter and a cast carafe (or a hand blown one if you spend a fortune). It honestly makes fantastic coffee and can rival a Chemex any day of the week once you figure out the best grind to use for the mesh filter, which can be a little tricky. What I have started using is a #3 or #4 paper filter inside the mesh filter and I have had great results. At a fraction of the price of the Chemex, it can’t be beat.
Edit: I know you’re looking for something that makes coffee for two people, but we have a singleserve pour over from OXO Good Grips that honestly makes some of the best coffee I’ve ever had. here’s an amazon link to it

Nothing special but easy and cheap is the OXO Pourover. I don’t make pour overs very much anymore but when I do I use this because of it’s convenience.

I am still struggling with not feeling well post-glutening, so I am not regularly consuming coffee until I start feeling better, but I feel much better about what I’m drinking since I am the only one using it and it’s literally just coffee beans and hot water that’s ground in my own house.

If your Mom brews a lot of coffee at the same time, a Moccamaster might make sense.

Oxo has a cute little pourover brewer with a showerhead and a water tank. No real dexterity required.
The Clever dripper might also be good here.

Update – bought the Bonavita and returning it now. I realize there was a recommendation for larger Moka pot. The only issue with that is that others in the household are not inclined to use it — too complicated. I have tried Chemex with friends and do not really like it as much for some reason – feels a little weak. Search continues.

I use an electric grinder powered by our inverter. I was using a stainless filterless single pour over but the cleanup was so water intensive. I went to a natural filtered pour over which makes it so easy to make coffee without cleaning equipment to brew every morning

Used to have Clever which I also liked, but prefer this one due to no need to time, somewhat easier to clean. All you need is access to hot water (offices usually have a hot water dispenser or even a microwave). You can make 1.5 cups about 12 Oz at a time.

Cleanup is only a small splash of water and a paper towel. The coffee grounds and paper filter go in the trash with no drama. Heat up water on the stove, dump it in the top measuring cup and you’ve got a fantastic cup of drip coffee in 2-3 minutes.

I’ve really enjoyed this one from OXO. I know it’s not a fancy coffee brand, but I love that I can just fill up the reservoir and let it do its thing.

If you really want to avoid any issues from a automated coffee maker, and also want to avoid the issues of a manual pour over, this seems to be the solution.

If you want to run a Microwave or Coffee Maker, you will need a 2000w inverter.
The coffee maker will put some serious hurt on your batteries. Microwave isn’t terrible because you are generally only running for 30 seconds or 2-3 minutes. Coffee maker is on for at least 15 minutes at a high load first thing in the morning when your batteries are at their most discharged (with an off-grid solar setup)
1 – Get an inverter (pure sine wave) they are awesome!
2 – Good job on the 2x Golf Cart batteries and solar

I’ve installed a few different inverters. Since trying to cook/heat water with power stored in your batteries goes QUICK, I’ve learned to not cook with electricity off-grid. Use your propane to cook, it is excellent at that.
Now you can get away with a high-quality 400 watt pure sine wave inverter for all the other things you want to do with 120VAC and you don’t need to invest in expensive huge copper cables/fuses, etc.
(this is coming from someone who runs their Jayco 6,000 BTU air conditioner off the batteries via 1,200 watt PSW inverter for 40 minutes at the kids’ bedtime)
