I was in the same boat as you, I burned, dried out, or over-spiced everything. Until I got these waterless pots/pans: http://www.amazon.com/Maxam-KT17-9-Element-Surgical-Stainless-Steel-Waterless/dp/B00077BHPS/ref=sr_1_1?ie=UTF8&qid=1436403854&sr=8-1&keywords=waterless+cookware+set

You put the lid on, set it to medium, and walk away. It’s very hard to burn or mess up the food. You can even cook frozen meat in it, to perfecton in ~20 minutes. You can start out finding one waterless pot/pan instead of buying the whole set, too.

Also, I watched a lot of Chopped and saw how they cooked great meals in a hurry. I saw how they’d set something to medium and leave it for 10 minutes, or how they ‘worked’ veggies in a pan to not overcook it. That really taught me a lot, and my husband thinks I’m a great cook now!
