I’m only replying to this because you have posted some incomplete information regarding Demeyere.

Demeyere makes several lines, the disc-based line that’s still sold in the US is the Atlantis line or the silver 7 (at Sur La Table). The disc is 2mm of copper surrounded by some silver and aluminum, with the stainless sides. The disc-based line that was aluminum was called Apollo which is no longer sold in the US. There clad lines are either industry/5-plus and the ProLine (of which the skillets are a part of the Atlantis line). The 8-inch skillet of the proline has 3.3mm of thickness, the 9.4-inch skillet and above have 4.8 mm of material. The conical sauciers/Dutch ovens have 3.3 mm of material in Atlantis in comparison to 3mm in the industry line. The exception to this is the wok which is all clad thickness of 2.2mm or so. The resto line is manufactured in China, the rest of the line is made in Belgium. They don’t go on crazy sales like all clad, however, you can track down rebadged versions at affordable prices.
They also have variations with two non-stick coatings one with Ceramic like green pan and another with standard Teflon within the non-Atlantis lines.

They made cookware for Viking and KitchenAid both listed as 7-ply. Specifically, the KitchenAid KCC7S10ST Professional 7-Ply Stainless Steel 10-Piece Cookware Set goes for $600 as a 10 piece set a combination of Atlantis and Industry/5-plus with the 5 plus lids and handles:

  • 8 & 10 inch skillets (Industry/5-plus)
  • 2 & 3 qt saucepans with lid(Atlantis)
  • 3 qt sauté pan with lid (Atlantis)
  • 8 qt stock pot with lid

Besides the increased performance, the surface treatment and the lack of riveted handles are the primary reasons to get them. However, those would have to be huge issues to purchase them over All-Clad (factory seconds) or even Cuisinart MCP (made in China), or Cuisinart French Classic (EU made). You may also be able to track down additional pieces that were made for KitchenAid will be harder to track down and may not be available as discounted as the KCC7SST10.
