Maybe a keyboard-video-monitor (KVM) switch would be more suited to what it seems like youre looking to do.
KVM switch are available in any number of configurations.

I have a MacBook Pro and Windows 10 desktop with a GTX 1060. Works very well, I’m able to get 144Hz on the desktop and 60Hz on the MBP through a USB-C hub. No lag or image degradation that I can tell.

Not OP, but I just bought this on amazon and it works great. Just follow the instructions during setup, I ignored the directions and just plugged everything in, so it didn’t work at first, lol.

What you are talking about is a KVM. A dock will only connect those things to one laptop. Assuming that you both have full sized USB and HDMI ports you can use something like this: https://www.amazon.com/JideTech-Peripheral-Sharing-Support-Resolution/dp/B07QM6ND7R
It stays connected to each laptop and switches the keyboard, mouse and display between them with the click of a button.

You are not poor. No need to use poor people solutions to problems
- Get a case that houses two PCs, like Phanteks ENTHOO MINI XL, Corsair 1000D, HAF Stacker, … and build two PCs in it
- Or get hades canyon nuc and put windows on it. Then put it at the back of a monitor with vesa mount or somewhere out of sight. This would be my preferred solution.
Then all you need is some nice kvm switch or even just some cheap one and you are switching between the two systems instantly.
