Thanks, this MF108 or /u/CynicalTree’s recommendation of a Ducky One both look pretty good! The one I see on Amazon is listed as the “MF108 V.2”. Is there any reason I should seek out the V.1 instead?
I’ve had my USB receiver plugged into the keyboard since my actual computer is a bit far from my working area, and with other electronics in between… Just an attempt to not have the mouse signal drop out. But if necessary I’m sure I can just get a USB extension cable and hide the mouse receiver somewhere nearby.

It was definitely an adjustment for me at first, but my keyboard is pretty damn loud so I could hear through the closed backs anyway. It was just muffled.

I have a USB-C connection on my PC that isn’t being used. I know some keyboards have USB-C now, but I’m wondering if I should base my decision on buying something like the Ducky Shine 7 over an IKBC MF1080 or Varmilo VA108M? For history, I had a Ducky Shine 5 Brown and loved it but gave it to a friend. I just want it to be fullsized (use the keypad a lot and liked the volume buttons on the Ducky) and have brown switches (I stay up very late night so I need something quiet). RGB is nice, but not a necessity as I only used the solid color options on the Ducky Shine 5 (no breathing or changing colors). Here’s my current desk

You can get those boards just fine. Can’t find it in stock in ISO-DE, but ISO UK is on Amazon.
Here’s the ISO DE version.

Here UK

These keycaps should fit, if you’re impatient and want to get the UK version.

But you can always email candykeys and ask when it’s back in stock. Or get a Ducky.

Ducky is a great choice. Also sounds like you like clicky switches so go for some blues.
Edit: Or one of these bad boys – https://www.amazon.com/IKBC-MF108-Mechanical-Keyboard-Aluminum/dp/B06WD8YY92

Personally, if I were you, I would pick an IKBC MF108 RGB https://www.amazon.com/IKBC-MF108-Mechanical-Keyboard-Aluminum/dp/B06WD8YY92
And if you cannot this one, there is the plastic case version aka ikbc f108 rgb. Quality is on par with Ducky but the value for money is better.
