I’m thinking about getting the Amazon Fire HD 8 Tablet.
Would that be a good option for what I’m trying to do?
I would have to buy a separate keyboard for that and I’m aware that I can download Google Play separately so I can access Google Docs and such.

Not only is the Paperwhite a great eReader it is much lighter and will last substantially longer on a single charge.
That said it is a sole use device, Kindle Fire might be a good alternative.

I got this amazon fire tablet when it was on sale cheap and sideloaded the play store to download the OBDeleven app. It works well because I only use it for this app so I don’t mind the ads on the lock screen.
