1 sweet pepper, cut into 8 or 10 strips. Spread some cream cheese on the pepper strip, and wrap it in a slice of turkey or ham. Pair this with a salad or some fruit, and you’ve got a good lunch. You can prep it ahead of time by cutting the peppers, but I’d wait until the day you’re going to eat them to put them together.
I also love omelets, 1-2 eggs stuffed with lightly sauteed veggies, and a little ham or bacon and cheese.
As much as I love cast iron, it’s too heavy for me to work with with my chronic illness. I bought a $60 set of pans off Amazon. They’re ceramic and I adore them. I will always recommend Aldi as your shopping destination, because you can get almost everything you need for a very good price including meat and seasonings.
