For a working keyboard, you will have to handwire. You will also have to work up some mounting system either way.

Novelkeys big switch are…big.

You may also consider larger momentary switches like this dome one.

You definitely don’t want to use regular MX switches because 1) large keycaps will probably be too heavy to return without like 300g springs and 2) the wobble will be so awful that it might break stems or just be unusable. I’m not sure what your project is for exactly, but I don’t expect kindergarteners to have trouble using regular sized keyboards. The kinderboard is pretty famous though.
